Are you looking for an easy and delicious to prepare lunch or dinner for your family? Well, you surely find it here because I am sharing a flavorful and nutritious chicken dish with pineapple. Of course, added with the creaminess of coconut called Pininyahang Manok (Pineapple Chicken).
This type of chicken recipe only needs simple ingredients and ready within just 20-30 minutes of complete preparation and cooking time. It can be a great pair with your favorite steamed rice and your family will definitely love it.
Here is the procedure for Pininyahang Manok (Pineapple Chicken):
- 1 kilo of Chicken (cut into serving pieces)
- 1 can of Pineapple Chunks
- 1 cup of Evaporated Milk (Coconut Milk optional)
- 1 large Onion (peeled and thinly sliced)
- 4 Cloves of Garlic (peeled and minced)
- 1 piece Red Pepper (seeded and cut into squares)
- 2 tablespoon of Fish Sauce
- Cooking Oil
- Salt and Pepper to taste
In a mixing bowl, marinate the chicken in the pineapple juice and add the right amount of salt for about 10-15 minutes.
In a medium-sized preheated casserole, pour the exact amount of cooking oil, then sauté garlic and onion until golden brown.
Next is to add the marinated chicken and let simmer until the color of the outer parts of the sliced chicken turns into light brown.
Afterwards, add the pineapple juice let simmer for 3 minutes, and then add the coconut cream before allowing to boil for about 3-5 minutes.
Lastly, add the pineapple chunks, red pepper, fish sauce and pepper then simmer for another 3 minutes or until the chicken become tender.
When ready, transfer the dish to a serving platter and serve to enjoy!
