This is a type of vegetable dish made primarily with Langka (Jackfruit) and a few other important ingredients, which is perfect for this Lenten Season because many people do not eat meat. We all know that most of us are doing fasting and so we prepare vegetable and fish dishes.
Ginataang Langka can be cook without any added meat, so this kind of delicious veggie recipe is flavorful because of the Alimasag (Blue Crab) and easy to prepare while at home.
You can also use prawns as alternative if crabs are unavailable.
Here is the procedure for Ginataang Langka with Alimasag:
- 1 kilo of Alimasag (Blue Crab) (cut in the middle)
- 500 ml of Coconut Milk
- 1 kilo Jackfruit Meat (cleaned and sliced for the dish)
- 1 large Onion (peeled and sliced)
- 4 Cloves of Garlic (peeled and minced)
- 1 thumb-sized Ginger (julienned)
- Vegetable Cooking Oil
- 3 pieces of Long Green Chili (optional)
- 2 tablespoon Shrimp Paste
- 1-2 cups of Water
- Salt and Pepper to taste
In a large casserole, pre-heat the vegetable cooking oil, then sauté ginger, garlic and onion until the mixture become golden brown. Next is to add the Alimasag (Blue Crab) and continue sautéing until it renders out the liquids and the crabs become reddish in color.
Afterwards, add the Jackfruit and allow simmering for about 5-7 minutes, before adding the shrimp paste and coconut milk. Make sure to stir continuously and bring to boil for about 10-15 minutes or until the Jackfruit becomes tender.
Next step is to add the green chili then season with the right amount of salt and pepper, let simmer for another 5 minutes.
When ready to serve, transfer in a serving bowl and enjoy eating with the perfect steamed rice!
