Feroka Special – Pork Kinilaw with Fresh Veggies

Feroka SpecialIf you love eating kinilaw dishes, you will surely find the recipe that I will share to you now an interesting one. This actually originates from the authentic Dinakdakan in the northern part of the Philippines, but with an intriguing twist and that makes it more flavorful and delicious.

I learned this recipe from a good friend through my boss and his name is Jeff or known as Fyl from Orani in Bataan. We called this as Feroka Special (Pork Kinilaw with Fresh Veggies) and this is a favorite appetizer served at the FEROKA GRILL in Balanga City. The intriguing sour taste and crunchy veggies is what makes this pork dish unique.

Here is the procedure for Feroka Special – Pork Kinilaw with Fresh Veggies:


  • 1 kilo Pork Liempo (marinated with salt and pepper)
  • ½ kilo Pork Liver (marinated with salt and pepper)
  • 2 medium-sized Pipino or Cucumber (washed and sliced into cubes)
  • 2 large Onion (red or white, peeled and sliced into cubes)
  • 1 large Bell Pepper (washed and sliced lengthwise)
  • 3 Chilies (sliced finely, optional)
  • 2 ½ cups of Vinegar (preferably sugarcane made)
  • 3-5 tablespoon of Brown Sugar
  • Salt and Pepper to taste


For Grilling:

  • Griller
  • Charcoal
  • Paper
  • Match or lighter



When the griller and heated charcoal is ready, grill the marinated pork and liver into golden brown. Make sure not to overcook the meat just with the right tenderness.

After completing the grilling process, slice the grilled pork and liver with your desired size and set for the final step.

Next is to cook the vinegar, sugar, right amount of salt and pepper, then bring to boil for about 5-10 minutes or until the mixture becomes evenly cooked.

It is important to have a perfect taste with balance aroma of sourness and sweetness.

When everything is ready, use a large mixing bowl to combine the sliced pork, liver and boiled vinegar mixture, then mix gently until the meat absorb the flavor evenly. Add the bell pepper, chili, right amount of salt and pepper to complete the taste.

Finally, mix at least half of the sliced cucumber, onion and then top the remaining half for a delicious pork appetizer.

Serve in a platter with your favorite beverage or as a main dish as well.
