Here is the procedure for Charcoal Grilled Blue Marlin:
- ½ kilo fresh Blue Marlin (cleaned and sliced for the dish)
- 1 whole medium lemon (juice extracted)
- 2 tablespoon of buttermilk
- Chili powder (optional)
- ½ cup of Soy Sauce
- 1 medium onion (peeled and chopped finely)
- 5 pieces Calamansi (juice extracted)
- Salt and pepper to taste
For the sauce:
In a small bowl, combine the soy sauce, onion, a bit of chili, salt and pepper to taste, then set aside.
In a medium sized mixing bowl, put the sliced Blue Marlin, and then add the lemon juice, chili, right amount of salt and pepper to complete the taste.
Afterwards, place them in a large platter and rub with the buttermilk gently to prepare for grilling.
To grill, preheat the charcoal in the griller and start grilling the Blue Marlin in low fire only. Allow the meat to become golden brown and turn upside down until you complete the procedure.
Remember not to overcook them and must be juicy when removing them from the griller.
