Buko Pandan Salad is my favorite dessert for any kind of special occasion or event. This particular dessert is made of gelatin cubes with tender young coconut meat and pandan leaves infused with cream. It is quick to prepare and the ingredients are easier to find in the market. This delicious and creamy dessert is surely the favorite of many people from different ages.

Here is the procedure for Buko Pandan ( Screwpine) Salad:
- 3 cups of Fresh Coconut Meat (sliced or cubes)
- 1 pack of Mr. Gulaman (preferably green color)
- 1 can of Nestle Cream
- 2 cans of Condensed Milk
- 1 can of Whole Corn (optional)
- Nata De Coco (optional)
- Eden Cheese (cut into cubes)
- ½ cup of white Sugar
- 6 pieces of Pandan leaves
- 6 cups of Water
For the Gulaman:
In a medium pot, combine water, gulaman and pandan leaves, then stir gently using a spoon. Allow the mixture to boil until the gulaman dissolved evenly and perfectly. When ready, remove the pandan leaves, transfer the liquid mixture into the trays and let cool until it hardens.
Afterwards, you can then cut the gulaman into cubes for the dessert.
In a mixing bowl, combine the coconut meat, whole corn, sliced gulaman, sugar, condensed milk and the Nestle cream. Mix all the ingredients properly until the taste become even.
Next is to transfer the mixtures in a Tupperware or salad and refrigerate for overnight to chill.
When ready to eat, serve and enjoy with your loved ones!
