Of course, it is one of the most popular Filipino dishes and recipes because it is easier to prepare with the necessary ingredients. Here is the procedure for the Kalderetang Kambing (Goat Meat Caldereta)
- 1 kilo goat meat (cut into cubes)
- 2 pcs. potato (cut into quarters)
- 2 pcs. medium-sized carrots (sliced for the dish)
- ¼ kilo fresh green peas
- 3 pcs. Chili (chopped finely)
- 250 grams tomato sauce
- 1 pc. red pepper (sliced horizontally)
- 1 small can of liver spread
- 1 large onion (chopped finely)
- 3 cloves of garlic (peeled and minced)
- Vegetable cooking oil
- 2 cups of water
- Salt and pepper to taste
In a medium casserole, boil the goat meat in water and a bit of salt for about 20-30 minutes, or until tender then strain and set aside.
Pre-heat the saucepan in medium fire and then put the right amount of cooking oil, sauté the garlic and onion for about 2 minutes. Afterwards, include the carrots, potatoes and mix properly then bring to boil for about 5-10 minutes before adding the 2 cups of water.
Add the goat meat and mix properly, then let simmer for about 10 minutes with cover. Add the red pepper, green peas, liver spread, tomato sauce, salt and pepper to complete the taste.
Bring to boil for at least 3 minutes and mix gently before serving!
