The classic way of cooking this Filipino’s favorite. Pork Sinigang is easy to prepare and delicious. When I was young my mother cook pork sinigang every weekend. She told me to buy the ingredients outside the subdivision. It was a training for me to choose a type of dish that I want and some nutritious vegetables. It is often eaten with rice as well as fish sauce with chilli.
Here is the procedure for the Pork Sinigang (Sour Pork Soup)
- 1 kilo pork liempo (cut into 3 inches long)
- 1 liter water
- 2 tablespoon of salt
- 1 big onion
- 2 pcs chilli
- 3 pcs tomatoes (cut into quarter)
- 8 pcs okra (cut into angle)
- 2 bundle kangkong leaves
- 1 pc raddish (cut into angle)
- 1 bundle sitaw (cut into 2 inches)
- 1 large gabi (cut into cubes)
- 1 large pack of sinigang mix with gabi
In a medium casserole combine pork and water cover, and bring to boil for about 40 minute or until the meat is tender. While boiling remove the bubbling elements on the top of water.
Then, add the right amount of salt, onion and tomatoes for 5 minutes. Afterwards include the okra, eggplant, raddish, sitaw then let simmer for about 5-7 minutes.
Finally add the sinigang mix with gabi let it boil for 10 minutes before serving.
Best serve with plain rice and enjoy eating with the family!
