When I talked about my favorite dish made of pure beef, there is no doubt that my choice is the Original Beef Kaldereta (Beef Stew). If you complete the exact ingredients, you will definitely have a flavorful beef dish for the whole family. Whatever occasion or gathering you have, this particular dish can stand out because it is delicious, healthful and satisfying to eat. Of course, you can as well consider using pork, chicken, goat meat or seafood.
Here is the procedure for Original Beef Kaldereta (Beef Stew)
- 1 kilo lean beef meat (sliced into cubes)
- 4 cloves of garlic (chopped finely)
- 1 ½ cup of tomato sauce
- 1 medium white onion (chopped finely)
- 2 large carrot (sliced into cubes)
- 4 pieces of potatoes (sliced into cubes)
- 5 bay leaf (laurel)
- 1 small can of liver spread
- 6 cups of water
- ½ cup cooking oil
- 2 bell peppers red and green (sliced into square)
- 1 Knorr beef cube (dissolve in ½ cup of water)
- 2 chilies (optional)
- Salt and pepper to taste
In a large casserole, combine beef in 5 cups of water, add a little salt and then bring to boil until tender. You can add water if necessary, but do not overcook the beef and then set aside.
In a large sauce pan, put the cooking oil and sauté the onion and garlic for 12- minute before adding the carrots and potatoes. Stir fry for about 3-5 minutes until the veggies become golden brown.
Add the tender meat and fry for at least 2-3 minutes before including a cup of water, and then bring to boil. When boiling, add the tomato sauce, dissolved beef cubes, liver spread and mix well on the pan.
While boiling in a medium fire, add the chilies, bell peppers, salt and pepper to taste. Let simmer for at least 5-7 minutes to thicken the sauce and ready for serving.
Transfer the cooked dish in a large platter and enjoy eating!
